Ingredients

  • 1 lb ground beef lean and cooked
  • 1 cup onion diced and sautéed
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 8 pieces corn tortillas warmed
  • 1 can diced green chiles drained
  • 1 can cream of chicken soup or use a homemade version
  • 1 cup sour cream or Greek yogurt for a lighter version
  • 1 clove garlic minced
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder optional
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked ground beef, sautéed onion, green chiles, half of the shredded cheese, cumin, chili powder, minced garlic, and salt & pepper to taste.
  3. Take each warmed corn tortilla and fill it with the beef mixture, rolling it up tightly.
  4. Place the rolled tortillas in a greased baking dish.
  5. In another bowl, mix together the cream of chicken soup and sour cream or Greek yogurt. Pour this creamy sauce over the rolled enchiladas.
  6. Sprinkle the remaining shredded cheese on top.
  7. Bake in the preheated oven for 25-30 minutes or until bubbly and golden.
  8. Let cool for a few minutes before serving. Enjoy your delicious enchiladas!

Notes

For a vegetarian option, substitute the beef with cooked beans or lentils. Feel free to add additional toppings like fresh cilantro or sliced jalapeños.
