- 1 lb ground beef lean and cooked
- 1 cup onion diced and sautéed
- 2 cups shredded cheese cheddar or Monterey Jack
- 8 pieces corn tortillas warmed
- 1 can diced green chiles drained
- 1 can cream of chicken soup or use a homemade version
- 1 cup sour cream or Greek yogurt for a lighter version
- 1 clove garlic minced
- 1 teaspoon cumin ground
- 1 teaspoon chili powder optional
- Salt & pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked ground beef, sautéed onion, green chiles, half of the shredded cheese, cumin, chili powder, minced garlic, and salt & pepper to taste.
- Take each warmed corn tortilla and fill it with the beef mixture, rolling it up tightly.
- Place the rolled tortillas in a greased baking dish.
- In another bowl, mix together the cream of chicken soup and sour cream or Greek yogurt. Pour this creamy sauce over the rolled enchiladas.
- Sprinkle the remaining shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes or until bubbly and golden.
- Let cool for a few minutes before serving. Enjoy your delicious enchiladas!
Notes
For a vegetarian option, substitute the beef with cooked beans or lentils. Feel free to add additional toppings like fresh cilantro or sliced jalapeños.
