Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter; mix until combined.
- Press the crust mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add granulated sugar, pumpkin puree, eggs, sour cream, vanilla extract, cinnamon, nutmeg, ginger, and salt; mix until fully combined.
- Pour the filling over the prepared crust in the springform pan.
- Bake in the preheated oven for 30 minutes or until the center is set.
- Allow to cool and refrigerate for at least 4 hours before serving.
