  • ¼ teaspoon all spice
  • ground
  • ¼ teaspoon nutmeg
  • ground
  • 450 g bread flour
  • unbleached
  • 10 g coarse sea salt
  • coarse
  • 1 tablespoon dutch process cocoa powder

Instructions

  1. In a large mixing bowl, combine the cooled chai latte and active sourdough starter, mixing well.
  2. Add the ground spices, including cinnamon, cardamom, ginger, cloves, all spice, and nutmeg. Stir to combine.
  3. Incorporate the bread flour and coarse sea salt into the wet mixture, kneading until a dough forms.
  4. Dust your work surface with flour and knead the dough for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for about 4-6 hours or until doubled in size.
  6. Once risen, shape the dough into a loaf and place it in a greased baking pan.
  7. Let the shaped loaf rise for an additional 1-2 hours until puffy.
  8. Preheat your oven to 375°F (190°C). Once ready, bake the bread for about 30 minutes or until golden brown and hollow sounding when tapped.
  9. Remove from the oven and let cool completely on a wire rack before slicing.
