Ingredients

2 cups frozen peas
½ cup water
¼ cup sesame oil

4 cups cubed pork loin
6 green onions
sliced
1 large carrot
cubed
2 cloves garlic
minced
20 ounces shredded cauliflower
6 tablespoons soy sauce
2 eggs
beaten
Instructions
- In a large skillet, heat 2 tablespoons of sesame oil over medium-high heat.
- Add the cubed pork loin and cook until browned and cooked through, about 5-7 minutes.
- Stir in the garlic, carrot, and green onions, cooking for another 3-4 minutes until vegetables are tender.
- Add the shredded cauliflower and frozen peas, and pour in the water. Cook for an additional 5 minutes, stirring frequently until the cauliflower is tender.
- Push the mixture to one side of the skillet, and pour the beaten eggs on the other side, scrambling until fully cooked.
- Combine everything together, add the remaining sesame oil and soy sauce, and mix well. Cook for another 2-3 minutes.
