½ cup Mayonnaise

4 ounces Diced Green Chiles

drained

1 ½ cups Cheddar Cheese

Fiesta Blend

shredded

1 teaspoon Garlic Powder

½ cup Salsa

Instructions

  • Preheat your oven to 350°F (175°C) and spray a 9×13 inch baking dish with cooking spray.
  • In a large skillet, brown the ground beef over medium heat until fully cooked, then drain excess fat.
  • Add the chopped red bell pepper, yellow onion, and taco seasoning to the skillet. Cook until the vegetables are tender.
  • In a separate bowl, mix the biscuit mix with water until just combined.
  • Stir in the sour cream, mayonnaise, diced green chiles, shredded cheddar cheese (reserve some for topping), garlic powder, and salsa into the beef mixture.
  • Spread the beef mixture evenly in the prepared baking dish. Top with the biscuit mixture. Sprinkle reserved cheddar cheese on top.
  • Bake in the preheated oven for 30 minutes or until the biscuit topping is golden brown and cooked through.
  • Let cool for a few minutes before slicing and serving.

Notes

For a spicier version, consider using hot salsa or adding jalapeños to the beef mixture.
