Ingredients
1.5 pounds Lean Ground Beef
1 Red Bell Pepper
seeded and chopped
1 Yellow Onion
chopped
1 ounce Taco Seasoning Mix
2 ½ cups Biscuit Mix
like Bisquick
1 cup Water
Cooking Spray
like Pam
½ cup Sour Cream
½ cup Mayonnaise
4 ounces Diced Green Chiles
drained
1 ½ cups Cheddar Cheese
Fiesta Blend
shredded
divided
1 teaspoon Garlic Powder
½ cup Salsa
mild
Instructions
- Preheat your oven to 350°F (175°C) and spray a 9×13 inch baking dish with cooking spray.
- In a large skillet, brown the ground beef over medium heat until fully cooked, then drain excess fat.
- Add the chopped red bell pepper, yellow onion, and taco seasoning to the skillet. Cook until the vegetables are tender.
- In a separate bowl, mix the biscuit mix with water until just combined.
- Stir in the sour cream, mayonnaise, diced green chiles, shredded cheddar cheese (reserve some for topping), garlic powder, and salsa into the beef mixture.
- Spread the beef mixture evenly in the prepared baking dish. Top with the biscuit mixture. Sprinkle reserved cheddar cheese on top.
- Bake in the preheated oven for 30 minutes or until the biscuit topping is golden brown and cooked through.
- Let cool for a few minutes before slicing and serving.
Notes
For a spicier version, consider using hot salsa or adding jalapeños to the beef mixture.
