Description

Ingredients

  • 1 can condensed milk
  • 1 can of evaporated milk
  • 1 cup coconut milk
  • 500 grams (about 2½ cups) flour
  • ½ cup sugar
  • 3 large whole eggs
  • 3 tablespoons margarine
  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 1 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large mixing bowl, combine the condensed milk, evaporated milk, and coconut milk.
  3. Add flour, sugar, eggs, and margarine to the mixture and beat until smooth.
  4. Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted comes out clean.
  5. While the cake is baking, prepare the icing by combining coconut milk and sugar in a pot over medium heat, stirring until sugar dissolves.
  6. Remove from heat and stir in the shredded coconut.
  7. Once the cake has cooled, spread the coconut icing over the top and serve.

Notes

Let the cake cool completely before icing to prevent melting. This cake pairs well with a cup of coffee.
