- 1 can condensed milk
- 1 can of evaporated milk
- 1 cup coconut milk
- 500 grams (about 2½ cups) flour
- ½ cup sugar
- 3 large whole eggs
- 3 tablespoons margarine
- 1 cup coconut milk
- 2 tablespoons sugar
- 1 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large mixing bowl, combine the condensed milk, evaporated milk, and coconut milk.
- Add flour, sugar, eggs, and margarine to the mixture and beat until smooth.
- Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted comes out clean.
- While the cake is baking, prepare the icing by combining coconut milk and sugar in a pot over medium heat, stirring until sugar dissolves.
- Remove from heat and stir in the shredded coconut.
- Once the cake has cooled, spread the coconut icing over the top and serve.
Notes
Let the cake cool completely before icing to prevent melting. This cake pairs well with a cup of coffee.
