  • 1/2 cup grated carrots
  • 1/3 cup crushed pineapple
  • 1/3 cup raisins
  • 1/3 cup diced walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs, vanilla extract, and pineapple Greek yogurt; whisk until smooth.
  4. Stir in the mashed bananas, grated carrots, crushed pineapple, and raisins (and walnuts if using) until fully incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an extra moist bread, you can incorporate a splash of orange juice or add more crushed pineapple. This bread also freezes well; just wrap it tightly to enjoy later.
