- 1 cup mashed ripe bananas
- 1/2 cup grated carrots
- 1/3 cup crushed pineapple
- 1/3 cup raisins
- 1/3 cup diced walnuts

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the melted butter, granulated sugar, and brown sugar until well combined.
- Add the eggs, vanilla extract, and pineapple Greek yogurt; whisk until smooth.
- Stir in the mashed bananas, grated carrots, crushed pineapple, and raisins (and walnuts if using) until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For an extra moist bread, you can incorporate a splash of orange juice or add more crushed pineapple. This bread also freezes well; just wrap it tightly to enjoy later.
