Description
This Carrot Apple Salad is a refreshing and healthy dish combining the sweetness of grated apples with the crunch of fresh carrots, perfect for a side dish or light meal.
Ingredients

6 medium carrots peeled and shredded
1 large apple grated or julienned
½ cup diced celery (optional)
¾ cup plain yogurt (or Greek yogurt)
1 tsp honey or maple syrup
2 tbsp lemon juice
1 tbsp chopped parsley
Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded carrots, grated apple, and diced celery if using.
- In a separate bowl, whisk together the yogurt, honey or maple syrup, lemon juice, and chopped parsley. Season with salt and pepper to taste.
- Pour the yogurt dressing over the carrot and apple mixture and toss until everything is well coated.
- Chill in the refrigerator for at least 10 minutes before serving.
