- 12 g sea salt

Instructions
- In a large mixing bowl, combine the water and sourdough starter, mixing until well combined.
- Add the bread flour and sea salt to the mixture, stirring until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
- Cover the dough and let it rise at room temperature for 4-6 hours, or until doubled in size.
- While the dough is rising, caramelize the onions: slice the onion and cook it in a skillet with butter over medium heat, stirring regularly, until golden brown and soft, about 20 minutes.
- Once the dough has risen, gently punch it down and fold in the caramelized onions and shredded Gouda.
- Shape the dough into a loaf and place it in a floured proofing basket. Let it rest for another hour.
- Preheat the oven to 450°F (230°C) with a Dutch oven inside.
- Carefully transfer the dough to the hot Dutch oven, cover it, and bake for 30 minutes. Remove the lid and bake for another 10-15 minutes to achieve a golden crust.

Notes
For best results, ensure your sourdough starter is active and bubbly before beginning the recipe. Allow the bread to cool completely for easier slicing.
