  • 1/4 cup (56g) unsalted butter

  • 1/4 cup (60ml) vegetable oil
  • 1/4 cup (52g) sugar
  • 1/2 cup (112g) packed brown sugar
  • 3/4 tsp vanilla extract
  • 3 tbsp (43g) sour cream
  • 2 large eggs
  • 3/4 cup (180ml) milk
  • 1 cup finely chopped apple
  • 1 1/4 cups (280g) unsalted butter
  • room temperature
  • 5 cups (575g) powdered sugar
  • 46 tbsp caramel sauce
  • pinch of ground cinnamon
  • additional caramel sauce
  • for drizzling
  • apple slices
  • for decorating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat the butter, oil, sugar, and brown sugar until creamy.
  4. Add the vanilla extract, sour cream, and eggs, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Fold in the chopped apples.
  7. Divide the batter among the prepared cupcake liners, filling each about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cupcakes cool completely on a wire rack.
  10. For the caramel buttercream, beat the butter until fluffy, then gradually add the powdered sugar.
  11. Add the caramel sauce and cinnamon, mixing until smooth and creamy.
  12. Frost the cooled cupcakes generously with caramel buttercream, drizzle additional caramel sauce, and decorate with apple slices.

Notes

Store cupcakes in an airtight container at room temperature for up to 3 days. For richer flavor, use homemade caramel sauce.
