Instructions

  1. To make the salted caramel sauce, heat the granulated sugar in a medium saucepan over medium heat, stirring constantly until it melts and turns amber in color.
  2. Once melted, carefully add the unsalted butter and stir until combined, then slowly pour in the whipping cream, mixing until smooth.
  3. Remove from heat and stir in the coarse salt and vanilla extract. Let it cool down.
  4. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  5. In a large bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt.
  6. In another bowl, mix the melted butter, brown sugar, and granulated sugar until well combined. Add the eggs, vanilla extract, and milk, and mix well.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated apple.
  8. Divide the batter evenly among the cupcake liners and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. While the cupcakes cool, prepare the caramel cream cheese frosting by beating the softened butter and cream cheese until smooth.
  10. Gradually add the powdered sugar and mix until fluffy, then mix in the salted caramel and salt as needed.
  11. Frost the cooled cupcakes with the caramel cream cheese frosting, drizzling extra salted caramel on top if desired.
