- ½ cup apple juice
- 2 ½ cups all purpose-flour
- 1 large tart apple peeled and coarsely shredded
- ½ cup packed brown sugar
- 3 tablespoons butter
- 3 tablespoons apple juice
- 2 ⅔ cups powdered sugar
- ½ cup finely chopped pecans toasted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and packed brown sugar until light and fluffy.
- Add baking soda, apple pie spice, salt, and egg, mixing until well combined.
- Stir in apple juice and gradually add all-purpose flour until just blended.
- Fold in the shredded apple.
- Drop tablespoons of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until lightly golden.
- For the frosting, combine packed brown sugar, butter, and apple juice in a saucepan over medium heat. Stir until smooth.
- Remove from heat and mix in powdered sugar until smooth and creamy.
- Drizzle frosting over cooled cookies and sprinkle with toasted pecans.
Notes
Make sure to use a tart apple for the best flavor contrast with the sweetness of the cookies.
