  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • ¼ tsp cinnamon
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples peeled and diced
  • 2 tbsp lemon juice
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup unsalted butter cold and cubed
  • ¼ cup chopped pecans optional
  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup heavy cream
  • 2 tbsp unsalted butter
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon to form the crust. Press firmly into the bottom of the prepared dish.
  3. In another bowl, mix softened cream cheese, granulated sugar, eggs, and vanilla until smooth. Pour over the crust.
  4. In a separate bowl, combine diced apples, lemon juice, brown sugar, cinnamon, and nutmeg. Spread evenly over the cheesecake layer.
  5. For the streusel, mix flour, brown sugar, cold cubed butter, and chopped pecans (if using) until crumbly. Sprinkle on top of the apple layer.
  6. Bake in the preheated oven for 30 minutes or until set and slightly golden. Allow to cool completely before slicing.
  7. For the caramel sauce, combine sugar and water in a saucepan over medium heat, cooking until the sugar dissolves and turns amber. Remove from heat and carefully stir in heavy cream, butter, and salt.
  8. Drizzle the caramel sauce over the cooled cheesecake bars before serving.

Notes

For an extra touch, serve with whipped cream and a sprinkle of cinnamon on top.
