- 4 large russet potatoes

- ½ cup (119 g) heavy whipping cream
- 1 cup (113 g) mild cheddar cheese

Instructions
- In a large pot, heat vegetable oil over medium heat.
- Add the sliced andouille sausage and cook until browned.
- Stir in the onion, celery, red bell pepper, and garlic; sauté until vegetables are tender.
- Add Cajun seasoning, salt, black pepper, paprika, and cayenne pepper; mix well.
- Pour in the chicken broth and add the cubed potatoes; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Stir in heavy cream and cheddar cheese until melted and well combined.
- Serve hot, garnished with chopped parsley.
Notes
For extra creaminess, blend a portion of the soup before adding the cream and cheese. Adjust spices according to your heat preference.
