- 0.4 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 3/4 tsp salt
- 1 tsp cinnamon
- 1/8 tsp ground nutmeg
- 4 oz cold butter
- 1.5 tsp vanilla
- 1 large egg
- 3.5 oz sourdough discard
- 4 tbsp heavy cream
- 5.5 oz peaches
- 2.5 tbsp butter
- 1.5 tbsp brown sugar
- 1.5 tbsp sugar
- 1/3 cup flour
- 1/4 tsp cinnamon
- 1 pinch salt
- 1 cup powdered sugar
- 1.5 tbsp milk
- 1 tsp fresh lemon juice
- 1 dash vanilla
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, mix vanilla, egg, sourdough discard, and heavy cream until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined, then gently fold in the diced peaches.
- Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick.
- Cut into scones and place them on the prepared baking sheet.
- For the crumb topping, mix melted butter, brown sugar, sugar, flour, cinnamon, and salt in a small bowl, then sprinkle over the scones.
- Bake for 25-30 minutes or until golden brown.
- While the scones are baking, whisk together the glaze ingredients until smooth.
- Once the scones are done, let them cool slightly, then drizzle the glaze over the top.
Notes
Ensure your butter is very cold for flaky scones. You can also substitute other fruit if desired.
