Ingredients

  • 1 cup dry quinoa
  • Toasted sesame oil
  • Kosher salt and black pepper
  • 1 pound broccoli
  • 2 teaspoons grapeseed or olive oil
  • 1 recipe chicken bulgogi or beef bulgogi marinade reserved
  • Green onions
  • sesame seeds and honey for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse and cook the quinoa according to package instructions.
  3. While the quinoa cooks, chop the broccoli into florets and toss with grapeseed oil, salt, and pepper.
  4. Spread the broccoli on a baking sheet and roast for 20 minutes, until tender and slightly charred.
  5. Marinate your choice of chicken or beef in the bulgogi marinade for at least 15 minutes.
  6. Cook the marinated meat in a skillet over medium-high heat until fully cooked, about 5-7 minutes.
  7. To assemble, divide the quinoa into bowls, top with roasted broccoli and bulgogi, and garnish with green onions, sesame seeds, and a drizzle of honey.
