Instructions

  • Preheat your oven to 350°F (175°C) and prepare a baking dish.
  • Carefully cut the tops off the bell peppers and remove the seeds and membranes.
  • In a bowl, mix together the shredded chicken, paleo mayonnaise, hot sauce, garlic powder, onion powder, nutritional yeast (if using), and chopped green onions until well combined.
  • Spoon the buffalo chicken mixture into each bell pepper until packed.
  • Place the stuffed peppers upright in the baking dish and cover with foil.
