- 2 lb boneless skinless chicken breast
- patted dry and diced into 2″ pieces
- ½ c cornstarch
- or arrowroot powder for paleo
- 2 teaspoon sea or kosher salt
- 1 teaspoon cracked black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 2 tablespoon olive oil
- or avocado oil for paleo
- ½ c Frank’s RedHot
- ½ c Texas Pete Original Hot Sauce
- or your favorite hot sauce – see suggestions in post
- 2 tablespoon butter
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine cornstarch, salt, pepper, onion powder, garlic powder, and paprika.
- Add the diced chicken to the bowl and toss until evenly coated with the spice mixture.
- Drizzle olive oil over the chicken and mix again to ensure all pieces are oiled.
- Spread the chicken pieces out in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes or until the chicken is cooked through and golden brown, flipping halfway through.
- While the chicken is baking, melt the butter in a saucepan over medium heat, then add Frank’s RedHot and Texas Pete Original Hot Sauce. Stir until combined.
- Once the chicken is done baking, remove it from the oven and toss it in the prepared hot sauce mixture.
- Serve hot and enjoy your Buffalo Chicken Bites!
