Description

These Brownie Bottom Mini Cheesecakes are easy to make and absolutely delicious, combining the richness of brownie and the creaminess of cheesecake in a perfect bite-sized treat.


Ingredients

  • 1 box brownie mix
  • 2 large eggs
  • ½ cup butter or oil
  • 16 oz cream cheese
  • softened
  • ⅓ cup granulated sugar
  • ¼ cup sour cream
  • ½ teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the brownie mix, eggs, and butter or oil until smooth. Scoop equal portions of the brownie batter into the prepared muffin tin, filling each liner about halfway.
  3. In another bowl, beat the cream cheese until smooth, then add granulated sugar, sour cream, vanilla extract, flour, and a pinch of salt. Mix until well combined and creamy.
  4. Scoop the cheesecake mixture on top of the brownie batter in each muffin cup.
  5. Bake for about 25-30 minutes, or until the cheesecake is set and the tops are lightly golden.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
