These Brownie Bottom Mini Cheesecakes are easy to make and absolutely delicious, combining the richness of brownie and the creaminess of cheesecake in a perfect bite-sized treat.

- 1 box brownie mix
- 2 large eggs
- ½ cup butter or oil
- 16 oz cream cheese
- softened
- ⅓ cup granulated sugar
- ¼ cup sour cream
- ½ teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the brownie mix, eggs, and butter or oil until smooth. Scoop equal portions of the brownie batter into the prepared muffin tin, filling each liner about halfway.
- In another bowl, beat the cream cheese until smooth, then add granulated sugar, sour cream, vanilla extract, flour, and a pinch of salt. Mix until well combined and creamy.
- Scoop the cheesecake mixture on top of the brownie batter in each muffin cup.
- Bake for about 25-30 minutes, or until the cheesecake is set and the tops are lightly golden.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
You can top these mini cheesecakes with fruit or chocolate sauce for added flavor.
