- 24 ounces room temperature Challenge cream cheese
- 1/2 cup sugar
- 3/4 cup light brown sugar
- 3 tbsp all purpose flour
- 3/4 cup room temperature sour cream
- 1 tbsp vanilla extract
- 4 large room temperature eggs
- 1 cup toasted pecans
- 2 1/4 cups graham cracker crumbs
- 1/2 cup melted Challenge salted butter
- 3 tbsp sugar
- 1 tsp ground cinnamon
- 1 cup cold heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon

Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9-inch springform pan.
- In a bowl, mix together the finely chopped pecans, light brown sugar, and melted butter until combined. Press this mixture into the bottom of the prepared pan to form the crust.
- In a saucepan over medium heat, melt the remaining 6 tbsp of butter until it turns golden brown. Remove from heat and let it cool slightly.
- In a mixing bowl, beat together the browned butter, cream cheese, sugar, light brown sugar, and flour until smooth. Add the sour cream and vanilla extract, mixing until fully incorporated.
- Add the eggs one at a time, mixing on low speed after each addition. Finally, fold in the toasted pecans.
- Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 30-35 minutes, or until the center is set but slightly jiggly.
- Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight.
- To make the cinnamon whipped cream, beat together the heavy whipping cream, powdered sugar, vanilla extract, and ground cinnamon until soft peaks form.
- Slice the cheesecake, serve with cinnamon whipped cream and a drizzle of caramel sauce.
