  • 6 tbsp Challenge salted butter
  • 24 ounces room temperature Challenge cream cheese
  • 1/2 cup sugar
  • 3/4 cup light brown sugar
  • 3 tbsp all purpose flour
  • 3/4 cup room temperature sour cream
  • 1 tbsp vanilla extract
  • 4 large room temperature eggs
  • 1 cup toasted pecans
  • 2 1/4 cups graham cracker crumbs
  • 1/2 cup melted Challenge salted butter
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 cup cold heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch springform pan.
  2. In a bowl, mix together the finely chopped pecans, light brown sugar, and melted butter until combined. Press this mixture into the bottom of the prepared pan to form the crust.
  3. In a saucepan over medium heat, melt the remaining 6 tbsp of butter until it turns golden brown. Remove from heat and let it cool slightly.
  4. In a mixing bowl, beat together the browned butter, cream cheese, sugar, light brown sugar, and flour until smooth. Add the sour cream and vanilla extract, mixing until fully incorporated.
  5. Add the eggs one at a time, mixing on low speed after each addition. Finally, fold in the toasted pecans.
  6. Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 30-35 minutes, or until the center is set but slightly jiggly.
  7. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight.
  8. To make the cinnamon whipped cream, beat together the heavy whipping cream, powdered sugar, vanilla extract, and ground cinnamon until soft peaks form.
  9. Slice the cheesecake, serve with cinnamon whipped cream and a drizzle of caramel sauce.
