- 2 Cups All-Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1–2 teaspoons Cinnamon
- 1/4 Cup Brown Sugar
- 2 Large Eggs
- 3 Tablespoons Unsalted Butter
- melted & cooled
- 2 teaspoons Vanilla Extract
- 2 Cups Buttermilk
- 1 Cup Chopped Peaches
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and brown sugar.
- In another bowl, beat the eggs and mix in the melted butter, vanilla extract, and buttermilk until well combined.
- Stir the wet ingredients into the dry ingredients until just combined. Gently fold in the chopped peaches.
- Preheat a griddle or skillet over medium heat and grease lightly with butter or oil.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve warm with maple syrup or additional brown sugar if desired.
Notes
Feel free to adjust the amount of cinnamon or sugar based on your taste preference. These pancakes freeze well for future enjoyment.
