Description
This Brown Sugar Peach Cake features a moist yellow cake infused with peach nectar and topped with a rich brown sugar frosting, perfect for summer gatherings.

15 ounce yellow cake mix
3 large eggs
1/3 cup vegetable oil
1/2 cup peach nectar or peach juice
1 lb peeled and chopped peaches
drop orange food coloring
1/2 cup unsalted butter
1/2 cup heavy cream
1 cup packed brown sugar
1 tsp vanilla extract
2 1/2 cups confectioner’s sugar

Instructions
- Preheat your oven according to the cake mix instructions and prepare a cake pan.
- In a mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and peach nectar and mix according to the package directions.
- Gently fold in the chopped peaches and orange food coloring, if using.
- Pour the batter into the prepared cake pan and bake as directed on the cake mix package until a toothpick comes out clean.
- While the cake is baking, prepare the brown sugar frosting by melting the butter in a saucepan, then whisking in heavy cream, brown sugar, and vanilla until smooth. Allow to cool slightly.
- Once the frosting mixture is cool, gradually add the sifted confectioner’s sugar until well combined and smooth.
- When the cake is done baking, let it cool completely before frosting it with the brown sugar frosting.
Notes
Make sure the peaches are ripe for best flavor, and you can adjust the sweetness of the frosting by adding more or less confectioner’s sugar.
