- 1 onion (diced)
- 2 medium carrots (diced)
- 3 cloves garlic (minced)
- 4 cups chicken stock
- ¼ cup cornstarch
- 1 cup milk
- 2 large potatoes (peeled and chopped into ½-inch cubes)
- 16 ounces broccoli florets (fresh or frozen)
- 1½ cups shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Instructions
- In a large pot, melt the butter over medium heat and sauté the diced onion and carrots until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken stock and bring to a boil.
- Stir in the diced potatoes and cook for about 10 minutes until they start to become tender.
- Add the broccoli florets and cook for another 5-7 minutes, until broccoli is tender.
- In a small bowl, mix the cornstarch with the milk until smooth, then add this mixture to the pot to thicken the soup.
