  • 16 ounces broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the diced onion and carrots until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken stock and bring to a boil.
  4. Stir in the diced potatoes and cook for about 10 minutes until they start to become tender.
  5. Add the broccoli florets and cook for another 5-7 minutes, until broccoli is tender.
