3 large sweet potatoes
for baking
½ cup bacon
cooked and crumbled
2 tablespoons unsalted butter
¼ cup shredded white cheddar cheese
6 large eggs
¼ teaspoon black pepper
½ teaspoon salt
scallion
minced (for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the sweet potatoes for about 45-50 minutes until they are tender.
- Once baked, let them cool slightly, then cut them open and scoop out a bit of the flesh.
- In a pan, melt the butter and sauté the bacon, adding in the sweet potato flesh, cheese, salt, and pepper.
- In a separate bowl, beat the eggs and pour them into the pan with the mixture. Stir until the eggs are just set.
- Spoon the egg mixture back into the sweet potato skins and garnish with minced scallions.
