- 4 large flour tortillas
- 1 pound ground turkey
- 2 cups shredded Colby Jack cheese
- 6 eggs
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, cook the ground turkey until browned and cooked through, seasoning with salt and pepper.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Pour the egg mixture into the skillet with the turkey and scramble until the eggs are fully cooked.
- On one half of each tortilla, layer the turkey and egg mixture and sprinkle cheese on top.
- Fold the tortillas in half and place them on a hot skillet to toast until golden brown and the cheese is melted, about 3-4 minutes per side.
- Cut into wedges and serve warm.
