Description

Start your day off right with a satisfying Breakfast Quesadilla filled with ground turkey, eggs, and melty cheese.


Ingredients

  • 4 large flour tortillas
  • 1 pound ground turkey
  • 2 cups shredded Colby Jack cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned and cooked through, seasoning with salt and pepper.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Pour the egg mixture into the skillet with the turkey and scramble until the eggs are fully cooked.
  4. On one half of each tortilla, layer the turkey and egg mixture and sprinkle cheese on top.
  5. Fold the tortillas in half and place them on a hot skillet to toast until golden brown and the cheese is melted, about 3-4 minutes per side.
  6. Cut into wedges and serve warm.
