Description

Start your day right with these delicious Breakfast Nachos, loaded with savory turkey sausage, scrambled eggs, and plenty of cheese, topped with fresh avocados and your favorite garnishes.


Ingredients

  • 1 Tablespoon olive oil or avocado oil
  • 1 lb homemade or store-bought turkey sausage
  • 8 whole eggs
  • 2 tablespoons water or milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon butter vegan butter
  • or oil
  • 8 ounces shredded cheese
  • 3/4 cup drained and rinsed black beans
  • 1/4 cup pico de gallo or diced tomatoes
  • 12 medium avocados sliced
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped fresh chopped cilantro
  • Optional topping: jalapeño sour cream
  • sliced jalapeño
  • black olives
  • Mexican pickled onions
  • hot sauce
  • green onions
  • guacamole
  • or avocado crema

Instructions

  1. Preheat the oven to 400°F (200°C) and spread the tortilla chips on a large baking sheet.
  2. In a skillet, heat olive oil over medium heat and add the turkey sausage, cooking until browned and cooked through.
  3. In a bowl, whisk together eggs, water or milk, salt, and pepper.
  4. Melt butter or oil in the skillet, add the egg mixture, and scramble gently until fully cooked.
  5. Layer the cooked sausage, scrambled eggs, black beans, and cheese over the tortilla chips.
  6. Bake for about 10 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with pico de gallo, avocado, red onion, and cilantro.
  8. Finish with optional toppings as desired and serve immediately.
