- ½ pound ground breakfast sausage
- 2 tablespoons unsalted butter softened
- 6 large eggs beaten
- 8 slices sourdough bread
- 8 slices Colby-Jack cheese
Instructions
- In a skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked. Drain excess fat and set aside.
- In the same skillet, reduce heat to low and add 2 tablespoons of butter. Once melted, pour in the beaten eggs and scramble until just set.
- Layer 4 slices of sourdough bread with 2 slices of Colby-Jack cheese each, followed by an even distribution of cooked sausage and scrambled eggs. Top with remaining cheese slices and finish with the remaining bread.
- In the same skillet, melt 2 tablespoons of butter over medium heat, then grill the sandwiches until golden brown and the cheese is melted, about 3-4 minutes per side.
- Slice each sandwich in half and serve hot.
