Ingredients

½ cup unsweetened applesauce or coconut oil

2 tablespoons maple syrup or honey

½ teaspoon ground cinnamon

1 ½ cups plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup mixed berries

1 ripe kiwi

1 orange

½ banana

Fresh mint for garnish


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine granola, applesauce or coconut oil, maple syrup or honey, and ground cinnamon until well combined.
  • Press the mixture into the bottom and up the sides of a tart pan to form the crust.
  • Bake the crust for 10-12 minutes or until it is golden brown. Let it cool completely.
  • In a separate bowl, mix plain Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice until smooth.
  • Spread the yogurt filling evenly into the cooled granola crust.
