This Breakfast Fruit Tart with Granola Crust is a delightful and healthy way to start your morning, combining the crunch of a granola crust with creamy yogurt and fresh fruit.
Ingredients
2 cups granola
½ cup unsweetened applesauce or coconut oil
2 tablespoons maple syrup or honey
½ teaspoon ground cinnamon
1 ½ cups plain Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup mixed berries
1 ripe kiwi
1 orange
½ banana
Fresh mint for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine granola, applesauce or coconut oil, maple syrup or honey, and ground cinnamon until well combined.
- Press the mixture into the bottom and up the sides of a tart pan to form the crust.
- Bake the crust for 10-12 minutes or until it is golden brown. Let it cool completely.
- In a separate bowl, mix plain Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice until smooth.
- Spread the yogurt filling evenly into the cooled granola crust.
- Top with mixed berries, kiwi, orange slices, and banana if using.
- Garnish with fresh mint if desired. Slice and serve.
