4–5 peaches cored and cut into wedges. Leave the skin on.
1 stick butter (8 tablespoons)
1 ¼ cup sugar
3 eggs
1 cup all-purpose flour
¼ cup almond flour
3 tbsp bourbon
½ tsp cinnamon
½ tsp vanilla
1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Melt the butter and pour it into the bottom of the prepared pan.
- Sprinkle ½ cup of sugar evenly over the melted butter.
- Arrange the peach wedges over the sugar mixture in an attractive pattern.
- In a mixing bowl, beat the remaining sugar and eggs together until light and fluffy.
- Gradually mix in the all-purpose flour, almond flour, bourbon, cinnamon, vanilla, and baking powder until just combined.
- Pour the batter over the arranged peaches in the pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 10 minutes, then invert onto a serving plate.
