45 peaches cored and cut into wedges. Leave the skin on

1 stick butter (8 tablespoons)

1 ¼ cup sugar

3 eggs

1 cup all-purpose flour

¼ cup almond flour

3 tbsp bourbon

½ tsp cinnamon

½ tsp vanilla

1 tsp baking powder


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a round baking pan, melt 4 tablespoons of butter in the oven, then sprinkle ½ cup of sugar over it.
  • Arrange the peach wedges in a circular pattern on top of the sugar and melted butter.
  • In a mixing bowl, cream the remaining butter and sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the bourbon, cinnamon, vanilla, baking powder, all-purpose flour, and almond flour until just combined.
  • Pour the batter over the arranged peaches in the pan.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Let it cool for a few minutes before inverting onto a serving plate.
