Deliciously creamy Blueberry Overnight Oats with a sweet blueberry layer, perfect for a quick and nutritious breakfast.
Ingredients

- 2 cups blueberries
- fresh or frozen
- 2 tablespoons maple syrup
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk
- 4 tablespoons maple syrup
- 1 cup Greek yogurt
- vanilla or blueberry yogurt
- 2–3 teaspoons vanilla extract
- 1 pinch salt
Instructions
- In a saucepan, combine the blueberries and 2 tablespoons of maple syrup. Cook on medium heat until the blueberries burst and create a sauce, about 5-7 minutes. Set aside to cool.
- In a large bowl, mix the rolled oats, chia seeds, water or milk, 4 tablespoons of maple syrup, Greek yogurt, vanilla extract, and a pinch of salt until well combined.
- Divide the oat mixture into jars or bowls, layering it with the blueberry sauce prepared earlier.
- Cover and refrigerate overnight or for at least 4 hours to allow the oats to soak and soften.
Notes
For added flavor, you can top with nuts or additional fruits before serving.
