Description

These Blueberry Banana Baked Oatmeal Cups are a delicious and healthy breakfast option that combines the natural sweetness of bananas with the burst of flavor from blueberries, all baked into convenient, portable cups.


Ingredients

  • 3 cups old-fashioned rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup mashed bananas (23 bananas)
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup honey (or maple syrup)
  • 2/3 cup almond milk (or milk of your choice)
  • 1 and 1/2 cups of blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
  3. In another bowl, mix together the mashed bananas, egg, vanilla, honey (or maple syrup), and almond milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 25-30 minutes, or until the tops are golden and a toothpick comes out clean.
  8. Allow to cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

These oatmeal cups can be stored in the refrigerator for up to a week and can also be frozen for longer storage. Reheat them in the microwave for a quick breakfast!
