These Blueberry Banana Baked Oatmeal Cups are a delicious and healthy breakfast option that combines the natural sweetness of bananas with the burst of flavor from blueberries, all baked into convenient, portable cups.

- 3 cups old-fashioned rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup mashed bananas (2–3 bananas)
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup honey (or maple syrup)
- 2/3 cup almond milk (or milk of your choice)
- 1 and 1/2 cups of blueberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
- In another bowl, mix together the mashed bananas, egg, vanilla, honey (or maple syrup), and almond milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 25-30 minutes, or until the tops are golden and a toothpick comes out clean.
- Allow to cool for a few minutes in the tin before transferring to a wire rack to cool completely.
Notes
These oatmeal cups can be stored in the refrigerator for up to a week and can also be frozen for longer storage. Reheat them in the microwave for a quick breakfast!
