This Best Strawberry Rhubarb Pie Recipe features a flaky crust that perfectly complements the sweet and tart filling of fresh strawberries and rhubarb.

2 ½ cups all-purpose flour
1 tsp salt
1 cup (2 sticks) unsalted butter
very cold and cubed
½ cup ice water (approx.)
4 cups sliced fresh strawberries
4 cups chopped fresh rhubarb
1 cup granulated sugar (adjust to taste)
¼ cup cornstarch
1 tsp lemon juice
½ tsp vanilla extract
Egg wash (1 egg + 1 tbsp water)
Instructions
- In a large bowl, combine flour and salt. Add the cubed cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit your pie dish. Place it in the dish and trim the edges.
- In a large bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss to combine and let sit for 10 minutes.
- Pour the fruit mixture into the prepared crust. Roll out the second disc of dough and place it over the filling. Cut slits for steam and crimp the edges to seal.
- Brush the crust with the egg wash and sprinkle a little sugar on top if desired.
- Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is bubbling. Allow to cool before serving.
Notes
For a sweeter pie, adjust the sugar to your taste, especially depending on the tartness of your rhubarb.
