- 3/4 cup blueberries
- 2.5 oz. cream cheese-softened
- 1 Tablespoon powdered sugar
- 1/2 teaspoon vanilla
- 3–4 tablespoons blueberry jam
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, corn starch, salt, and baking powder; set aside.
- In a large mixing bowl, cream together the unsalted butter and sugar until fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in the chopped white chocolate and blueberries gently.
- For the filling, mix the cream cheese, powdered sugar, and vanilla until smooth, then stir in the blueberry jam.
- Scoop dough onto the baking sheet, creating a indentation in each cookie to add the filling.
- Fill each indentation with the cream cheese mixture.
- Bake for 12-15 minutes, or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
