Description
These Berliner, or German donuts, are light and fluffy with a delicious jam filling, perfect for a sweet treat or dessert.
Ingredients

- 4 cups all-purpose flour
- 1/3 cup sugar
- 2 1/4 teaspoons instant yeast
- 1 1/2 teaspoons lemon zest
- 1/2 teaspoon kosher salt
- 1 cup milk

- 2 large eggs

- 5 tablespoons unsalted butter
- melted and cooled to room temp
- 1 1/2 teaspoons pure vanilla extract
- 1 cup raspberry jam
- or jam/filling of choice
- granulated sugar
- (about 1 cup)
- pinch of cinnamon
- powdered sugar (about 1/2 cup)
- oil for frying
- choose a neutral tasting oil with a high smoke point like avocado or canola
Instructions
- In a large mixing bowl, combine flour, sugar, yeast, lemon zest, and salt.
- In another bowl, whisk together milk, eggs, egg yolk, melted butter, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, until doubled in size.
- Punch down the dough and roll it out to about 1/2-inch thickness. Cut into circles using a cookie cutter.
- Place a tablespoon of raspberry jam in the center of half the circles, then top with the remaining circles, sealing the edges well.
- Let the filled donuts rise for another 30 minutes.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the donuts in batches until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels. While still warm, toss in granulated sugar mixed with a pinch of cinnamon.
- Dust with powdered sugar before serving.
Notes
Ensure the oil temperature is consistent for even frying. You can use any jam or filling you prefer.
