This hearty Beef & Barley Soup combines tender chunks of chuck roast with wholesome vegetables and pearl barley for a comforting meal that’s perfect for chilly days.

- 1 (3-pound) chuck roast
- fat trimmed
- cut into approximately 1-inch pieces
- 1 tablespoon kosher salt
- plus more for serving
- 3 tablespoons extra-virgin olive oil
- 1 small yellow onion
- diced
- 2 large carrots
- peeled and diced
- 3 celery ribs
- diced
- 3 garlic cloves
- minced
- 2 tablespoons tomato paste
- 2 teaspoons beef bouillon or Better Than Bouillon
- 2 teaspoons fresh thyme leaves
- 8 cups beef stock
- 1 tablespoon low-sodium soy sauce
- 1 cup pearl barley
- Freshly cracked black pepper
- to taste
- Finely chopped fresh flat-leaf parsley leaves
- for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the chuck roast pieces and season with kosher salt. Brown the beef on all sides, about 5-7 minutes.
- Add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables begin to soften, about 5 minutes.
- Stir in the tomato paste, beef bouillon, and fresh thyme. Cook for another minute before adding the beef stock and soy sauce.
- Bring the mixture to a boil, then reduce the heat to low. Add the pearl barley and cover the pot. Simmer for 30 minutes, or until the barley and vegetables are tender.
- Season with freshly cracked black pepper and additional salt if needed. Serve hot, garnished with chopped parsley if desired.
Notes
This soup can be made ahead of time and freezes well. Reheat gently on the stove, adding extra stock if necessary.
