Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter softened
2 large eggs
1 cup milk
1 ½ tsp baking powder
1 tsp vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a mixing bowl, cream together ½ cup unsalted butter and 1 cup granulated sugar until light and fluffy.
- Add 2 large eggs one at a time, mixing well after each addition.
- Stir in 1 tsp vanilla extract and mix until combined.
- In another bowl, whisk together 1 ½ cups all-purpose flour, 1 ½ tsp baking powder, and ¼ tsp salt.
- Gradually add the dry ingredients to the wet mixture, alternating with 1 cup milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly into the cupcake liners and bake for 20-25 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool completely on a wire rack.
- For the frosting, beat 1 cup softened unsalted butter until creamy, then gradually add 4 cups powdered sugar while continuously mixing.
- Add 2-4 tbsp milk and 1 tsp vanilla extract, mixing until you reach your desired consistency.
- Divide the frosting into three bowls and tint one with blue, one with yellow, and one with green food coloring.
- Frost the cooled cupcakes with the colored frosting and sprinkle with edible sand. Add mini umbrellas and candy shells for a fun beach touch.
