Description

These Bangin’ Breakfast Potatoes are a delicious way to start your day, featuring crispy golden potatoes tossed with bacon and garlic, then finished with a hint of sweetness from maple syrup.


Ingredients

2 slices of bacon

1 lb. small golden potatoes

2 tablespoons olive or avocado oil

Salt

pepper and Old Bay seasoning as needed

12 garlic cloves minced

1 tablespoon pure maple syrup

Optional: fresh parsley or chives for garnish


Instructions

  • Preheat your oven to 400°F (200°C).
  • Cook the bacon in a skillet until crispy. Remove and crumble, reserving the drippings.
  • Cut the golden potatoes into bite-sized pieces and toss them in a bowl with olive oil, bacon drippings, minced garlic, salt, pepper, Old Bay seasoning, and maple syrup.
  • Spread the seasoned potatoes on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
  • Once cooked, remove from the oven and sprinkle with crumbled bacon. Garnish with fresh parsley or chives if desired.

Notes
