These Bangin’ Breakfast Potatoes are a delicious way to start your day, featuring crispy golden potatoes tossed with bacon and garlic, then finished with a hint of sweetness from maple syrup.
Ingredients

2 slices of bacon
1 lb. small golden potatoes
2 tablespoons olive or avocado oil
Salt
pepper and Old Bay seasoning as needed
1–2 garlic cloves minced
1 tablespoon pure maple syrup
Optional: fresh parsley or chives for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the bacon in a skillet until crispy. Remove and crumble, reserving the drippings.
- Cut the golden potatoes into bite-sized pieces and toss them in a bowl with olive oil, bacon drippings, minced garlic, salt, pepper, Old Bay seasoning, and maple syrup.
- Spread the seasoned potatoes on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
- Once cooked, remove from the oven and sprinkle with crumbled bacon. Garnish with fresh parsley or chives if desired.
Notes
For extra crispy potatoes, make sure they are spread out on the baking sheet without overlapping. Feel free to adjust seasonings to taste.
