- 1 cup (232 g) mayonnaise
- ½ cup (132 g) Thai sweet chili sauce
- 1 teaspoon Sriracha

- 1 ½ pounds boneless skinless chicken tenderloins
- 1 cup (245 g) buttermilk
- ¾ cup (94 g) all-purpose flour
- ½ cup (64 g) cornstarch
- 1 large egg

- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper

Instructions
- In a bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey to create the Bang Bang sauce. Set aside.
- In another bowl, marinate the chicken tenderloins in buttermilk for at least 30 minutes.
- In a shallow dish, combine flour, cornstarch, egg, Sriracha, garlic powder, kosher salt, black pepper, and cayenne pepper (if using).
- Dredge the marinated chicken tenderloins in the flour mixture until well coated, then dip them into the panko breadcrumbs to coat completely.
- Heat canola oil in a large frying pan over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 4-5 minutes per side.
- Remove the chicken from the oil and drain on paper towels. Toss the hot chicken in the Bang Bang sauce until coated.
- Serve the Bang Bang Chicken garnished with chopped parsley.
Notes
You can adjust the spiciness of the Bang Bang sauce by increasing or decreasing the amount of Sriracha. For a lighter version, bake the chicken instead of frying.
