  • ½ cup (132 g) Thai sweet chili sauce
  • 1 teaspoon Sriracha

  • 2 tablespoons honey
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup (245 g) buttermilk
  • ¾ cup (94 g) all-purpose flour
  • ½ cup (64 g) cornstarch
  • 1 large egg
  • room temperature
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper

  • 2 cups (216 g) panko breadcrumbs
  • plain
  • canola oil
  • for frying
  • parsley
  • chopped
  • for garnish

Instructions

  1. In a bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey to create the Bang Bang sauce. Set aside.
  2. In another bowl, marinate the chicken tenderloins in buttermilk for at least 30 minutes.
  3. In a shallow dish, combine flour, cornstarch, egg, Sriracha, garlic powder, kosher salt, black pepper, and cayenne pepper (if using).
  4. Dredge the marinated chicken tenderloins in the flour mixture until well coated, then dip them into the panko breadcrumbs to coat completely.
  5. Heat canola oil in a large frying pan over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 4-5 minutes per side.
  6. Remove the chicken from the oil and drain on paper towels. Toss the hot chicken in the Bang Bang sauce until coated.
  7. Serve the Bang Bang Chicken garnished with chopped parsley.

Notes

You can adjust the spiciness of the Bang Bang sauce by increasing or decreasing the amount of Sriracha. For a lighter version, bake the chicken instead of frying.
