These delicious Banana Oat Muffins are a perfect combination of healthy oats and sweet bananas, great for breakfast or a snack.

- 1 cup rolled oats
- ½ cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- ¾ cup milk
- ⅓ cup vegetable oil
- ½ teaspoon vanilla extract
- 1 cup mashed bananas
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the flour, oats, sugar, baking powder, baking soda, and salt together.
- In another bowl, whisk the egg, then add the milk, vegetable oil, vanilla extract, and mashed bananas.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
