1 1/2 cups all purpose flour (180g)
1 teaspoon baking soda
½ tsp salt
2/3 cup sugar (113g)
1 cup semisweet chocolate chips plus more for the tops if desired
3 medium ripe bananas or 1 cup of mashed banana
1/3 cup melted butter slightly cooled (75g)
1 large egg
1 teaspoon vanilla (5ml)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, and salt.
- In another bowl, mix the sugar, mashed bananas, melted butter, egg, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chocolate chips, reserving a handful for topping if desired.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full, and sprinkle additional chocolate chips on top.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let cool before serving.
Notes
Make sure your bananas are very ripe for the best sweetness and flavor. These muffins freeze well, so you can make a batch ahead of time!
