Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Place the chicken thighs in a large baking dish and pour the balsamic mixture over them, ensuring they are well coated.
- Add the halved shallots, quartered peaches, and cherry tomatoes to the dish around the chicken.
- Bake for about 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves before serving.
