- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups almond milk or nut-free plant milk
- 2 large eggs or flax eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 nectarines (sliced)
- 1/2 cup pecans or pumpkin seeds
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, and salt.
- In another bowl, whisk together the almond milk, eggs or flax eggs, honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix well.
- Fold in the sliced nectarines and pecans or pumpkin seeds.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 30 minutes until the top is golden and a toothpick inserted comes out clean.
- Allow to cool slightly before slicing and serving.
Notes
Feel free to adjust the sweetness to your liking by adding more honey or using a sweeter plant milk. Store leftovers in the fridge for up to 3 days.
