Description

Ingredients
1½ pounds haddock (2 filets)
½ tsp salt
½ tsp pepper
½ tsp Old Bay seasoning (optional)
2 tbsp butter
½ cup red bell pepper chopped
½ cup onion chopped
1 cup mushrooms sliced
10 oz can condensed cream of mushroom soup (284mL)
1 cup milk
2 tbsp capers (optional)
1 cup grated cheddar cheese
Topping: ½ cup breadcrumbs
1 tbsp melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a frying pan, melt 2 tablespoons of butter over medium heat.
- Add the chopped red bell pepper, onion, and sliced mushrooms, sautéing until softened.
- In a large bowl, combine the cream of mushroom soup, milk, capers (if using), salt, pepper, and Old Bay seasoning.
- Fold in the sautéed vegetables.
- Arrange the haddock fillets in a greased baking dish, covering them with the soup and vegetable mixture.
- Sprinkle the grated cheddar cheese on top.
- In a small bowl, combine breadcrumbs and 1 tablespoon of melted butter, then sprinkle over the top.
- Bake in the preheated oven for about 30 minutes, or until the fish flakes easily with a fork and the top is golden brown.
Notes
