- 1 (8-ounce package) Feta Cheese
- 1 quart Whole Cherry Tomatoes
- 2 tablespoons Extra Virgin Olive Oil
- Black Pepper
- 3 cloves Garlic
- minced
- 8 ounces Dried Pasta
- ¼ cup Fresh Oregano
- Optional: Fresh Parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, and a pinch of black pepper. Toss well to coat.
- Place the block of feta cheese in the center of the tomatoes and drizzle with additional olive oil if desired.
- Bake in the preheated oven for 30 minutes, until the feta is soft and slightly golden.
- Meanwhile, cook the pasta according to package instructions. Drain and set aside.
- Once the feta and tomatoes are done baking, remove from the oven and stir until creamy.
- Mix in the cooked pasta and fresh oregano until well combined.
- Serve hot, garnished with fresh parsley if desired.
Notes
For an extra flavor boost, you can add red pepper flakes or other herbs of your choice.
