- 2½–3 pounds
- Kosher salt
- Freshly ground black pepper
- ¼ cup (60 ml) extra virgin olive oil
- 1 chopped onion
- 4 finely chopped or grated garlic cloves
- 3 chopped oil-packed anchovies
- 1 teaspoon dried oregano
- 1 teaspoon ground fennel seed

- ½ teaspoon crushed red pepper
- or more/less to taste
- 1 15-ounce (30 g) can crushed tomatoes
- 1 cup jarred roasted red peppers
- drained and chopped
- 1½ cups shredded mozzarella cheese
- 1 cup fresh basil leaves
- torn or chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the garlic, anchovies, oregano, fennel seed, and crushed red pepper; cook for another minute.
- Stir in the crushed tomatoes and roasted red peppers, and bring the sauce to a simmer.
- Place the seasoned chicken breasts in the skillet, spooning some sauce over the top.
- Top with the shredded mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 25 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Garnish with fresh basil before serving.
Notes
This dish can be served with pasta, rice, or a side salad for a complete meal. Adjust the amount of crushed red pepper for desired spice level.
