  • 2 pieces whole-wheat sandwich bread torn into pieces
  • 3 tablespoons milk
  • â…“ cup shredded Parmesan cheese
  • ¼ cup grated onion
  • 1 egg
  • 2 tablespoons minced oregano
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 pound lean ground chicken

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the torn bread pieces and milk; let it sit for a few minutes until the bread is soaked.
  3. Add the Parmesan cheese, grated onion, egg, oregano, garlic, olive oil, salt, and pepper to the soaked bread, and mix until well combined.
  4. Incorporate the ground chicken into the mixture until evenly combined.
  5. Form the mixture into meatballs, about 1.5 inches in diameter, and arrange them on the prepared baking sheet.
