- 2 pieces whole-wheat sandwich bread torn into pieces
- 3 tablespoons milk
- â…“ cup shredded Parmesan cheese
- ¼ cup grated onion
- 1 egg
- 2 tablespoons minced oregano
- 2 cloves garlic minced
- 1 tablespoon olive oil
- ¾ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 pound lean ground chicken
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the torn bread pieces and milk; let it sit for a few minutes until the bread is soaked.
- Add the Parmesan cheese, grated onion, egg, oregano, garlic, olive oil, salt, and pepper to the soaked bread, and mix until well combined.
- Incorporate the ground chicken into the mixture until evenly combined.
- Form the mixture into meatballs, about 1.5 inches in diameter, and arrange them on the prepared baking sheet.
- Bake for 25-30 minutes or until the meatballs are cooked through and golden brown.
Notes
These meatballs can be served with spaghetti, in a sub, or enjoyed on their own. You can also freeze the uncooked meatballs for later use.
