Ingredients

2 Tbsp. honey
2 Tbsp. oil
such as avocado or olive oil
2 garlic cloves
minced
1 tsp. Italian seasoning
1 Tbsp. Dijon mustard
8 oz. grape tomatoes
halved
8 oz. fresh mozzarella balls
2 Tbsp. finely chopped fresh basil
2 lb. boneless
skinless
chicken breasts
pounded to even thickness
2 Tbsp. avocado oil or other high-heat oil
Kosher salt and fresh black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard.
- Place the pounded chicken breasts in a baking dish and season with salt and pepper. Pour the balsamic mixture over the chicken, ensuring it’s well-coated.
- In another bowl, combine halved grape tomatoes, fresh mozzarella, and chopped basil. Mix gently.
- After baking the chicken for 20 minutes, remove it from the oven, and top with the tomato mozzarella mixture.
- Return to the oven and bake for an additional 10 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
- Let it rest for a few minutes before slicing and serving.
Notes
For best results, let the chicken marinate in the balsamic mixture for at least 30 minutes before baking. You can also add other vegetables to the tomato mozzarella mix for extra flavor.
