Baba Ghanoush is a smoky, creamy eggplant dip infused with garlic and herbs, perfect for spreading on pita or serving as a dip with fresh vegetables.

- 2 medium eggplants sliced into 1/2 inch rounds
- 2 tablespoons olive oil for brushing and glazing
- 1 teaspoon smoked paprika adds smoky flavor
- 1 teaspoon dried thyme for aroma and earthiness
- 3 cloves garlic minced
- to taste salt and black pepper for seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- Brush the eggplant slices with olive oil, then sprinkle with salt, black pepper, smoked paprika, and dried thyme.
- Place the seasoned eggplant slices on a baking sheet and roast in the oven for about 25 minutes, or until they are tender and golden brown.
- Remove the eggplant from the oven and let it cool slightly, then peel off the skin and transfer the flesh to a bowl.
- Add minced garlic and mix well until smooth and creamy. Adjust seasoning to taste.
- Serve your Baba Ghanoush with pita bread or fresh vegetables.
Notes
For a richer flavor, consider adding tahini or lemon juice to the Baba Ghanoush while blending.
