Description

Baba Ghanoush is a smoky, creamy eggplant dip infused with garlic and herbs, perfect for spreading on pita or serving as a dip with fresh vegetables.


Ingredients

  • 2 medium eggplants sliced into 1/2 inch rounds
  • 2 tablespoons olive oil for brushing and glazing
  • 1 teaspoon smoked paprika adds smoky flavor
  • 1 teaspoon dried thyme for aroma and earthiness
  • 3 cloves garlic minced
  • to taste salt and black pepper for seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brush the eggplant slices with olive oil, then sprinkle with salt, black pepper, smoked paprika, and dried thyme.
  3. Place the seasoned eggplant slices on a baking sheet and roast in the oven for about 25 minutes, or until they are tender and golden brown.
  4. Remove the eggplant from the oven and let it cool slightly, then peel off the skin and transfer the flesh to a bowl.
  5. Add minced garlic and mix well until smooth and creamy. Adjust seasoning to taste.
  6. Serve your Baba Ghanoush with pita bread or fresh vegetables.

Notes

For a richer flavor, consider adding tahini or lemon juice to the Baba Ghanoush while blending.
