- 1 ½ cups all-purpose flour
- ½ cup firmly packed light brown sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- ¼ teaspoon ground ginger
- ¼ teaspoon ground allspice
- ⅛ teaspoon ground nutmeg

- ¼ cup unsalted butter
- cold and cut into 1/2-inch cubes
- ¼ cup milk
- sanding sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt 3 tablespoons of butter over medium heat. Add the chopped pears, granulated sugar, flour, ground cinnamon, salt, and vanilla extract. Stir to combine and cook until the pears are tender, about 5-7 minutes.
- Transfer the pear mixture to a greased baking dish.
- In a separate bowl, mix together 1 ½ cups flour, brown sugar, baking powder, cinnamon, cardamom, ginger, allspice, nutmeg, and a pinch of salt.
- Cut in the cold butter cubes until the mixture resembles coarse crumbs. Stir in the milk until just combined.
- Drop spoonfuls of the topping over the pear filling.
- Sprinkle sanding sugar on top of the cobbler.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
For a twist, add chopped walnuts or pecans to the topping for added crunch.
